Weekday supper: Vegan tomato and bean soup


Recently I stumbled across 'The Blue Zones'. First appearing in the National Geographic in the article "The Secrets of a Long life", the blue zones are regions of the world that Dan Buettner discovered people lived the longest: Sardinia, Okinawa, Loma Linda, Nicoya Peninsula and Icaria. From this he identified a few characteristics that people have from these regions which makes them live longer. 

To get to the point, they incorporate a lot of beans into their everyday diet... therefore I have been trying to add more beans (amongst other things) to my weekday meals! I have adapted a recipe I found on the blue zone website and thought I would share it with you... 



Ingredients (to serve 3/4) 

  • 1 can of tinned tomatoes (chopped)
  • 1 can/carton of cannelloni beans 
  • 1 small onion (I used 2 shallots)
  • 1 garlic clove 
  • 2 teaspoons of olive oil 
  • 1 teaspoon of frozen basil leaves (or a handful of fresh leaves if you have them)
  • 1 cup of vegetable stock 
  • Half a cup of oat/almond milk (I used Oatly barista edition) 
  • 1 teaspoon of sugar
  • Lots of black pepper
  • 1 teaspoon of chilli flakes (optional)


Method (only takes 15 mins) 

1) Start by adding the olive oil to a saucepan and start to heat up 
2) Chop the onions and garlic, then add to the preheated pan to soften for a few minutes
3) Add the beans, tomatoes, stock and the rest of the ingredients to the pan and simmer for around 10 mins 


4) Once it's all heated through, blend with a hand blender or stand blender until smooth
5) Serve with bread and butter
