Weekly meal prep + food shopping: My top 5 tips

When I lived in London spending Sunday afternoon wandering around Waitrose and Wholefoods was one of the highlights of my week (I know, I'm sad). Now I live in Sweden I mostly do all my shopping online, as it's more convenient, and I've lost the love for spending hours in the supermarket. However, I do still love planning and cooking meals. So I thought I would share my top tips for making the process a bit easier and more organised...

Keep a running shopping list

This is the main thing I make sure I stick to - whenever I see/remember something has run out I will immediately add it to my Google Keep shopping list. I do also share this with Ted, in the hope that one day he will add to it too. I used to have this as a paper list, but found it was easier to keep a digital list on my phone - as I could update it on the go if I need to.  If you have a Google Home you can also link it up and add things to the list via voice - just don't tell your friends you have it, otherwise you will end up with some strange things on there...

Look through cookery books and plan a few 'new' meals

If you're not really a foodie then you can probably skip this step. If you are, keep reading... Before I start my main shopping list (added to my Google Keep list above) I look through a few cookery books/online recipes to get a few ideas of any new meals I could cook the following week. The books I consistently come back to are: Eat, Jamie's 15 Minute Meals (he also has a few of the recipes on his website here) and Feed Me Vegan.

Keep a list of  'tried and tested' and 'Easy meals'

From the above, keep a running list (yep, another list) of meals that you liked and are easy to make throughout the month. This means that you can keep going back to these if you're lacking inspiration/need something quick. This could even be something as simple as soup or boiled eggs and toast. We always go back to homemade curry and tacos.

Stock up on frozen staples

I always stock up on frozen staples, that can go bad quickly in the fridge but are easily added to make any meal better: avocado, berries, herbs, spinach, prawns, Quorn mince ... you can also get frozen chopped onions and garlic to save time.

Always have 'last minute' options in the larder

Lastly, this kind of carries on from the above... I always have something that can be kept in the larder for the in-between shop days e.g. pasta, jars of pesto, and cans of chopped tomatoes and chickpeas (good for homemade humus).
